Academic research from the University of Würzburg found that menu-based carbon labelling reduced meal-related emissions by up to 13.5% through consumer choice alone — without any change to the menu itself. In a recent London Climate Action Week session, 60% of attendees said climate information on menus would significantly influence their dining choices, with a further 26% saying it would sometimes.
The wider consumer signal reinforces this: surveys cited at the same session found 80% of consumers willing to pay more for sustainable products, 46% already buying more of them, and an average 29% price premium associated with sustainable labelling. Demand for the information exists; for most operators, the decisions on where and how to act remain under-informed.

What does implementation actually involve?
The methodology is straightforward. Applying it across live kitchen operations and supply chains is where the real work sits. Five considerations tend to surface:
- Recipe complexity. A single regional dish can involve well over 100 individual ingredients once spices, oils, and protein or vegetarian variants are counted — multiplied across a full menu.
